Last night, I made a vegetarian Shepherd’s pie. It was actually really, really good!
I used:
2 pounds russet potatoes, peeled and cubed
2 tablespoons sour cream
1 large egg
Salt and freshly cracked pepper
1 tablespoon extra-virgin olive oil (for pan)
3 carrots, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups vegetable broth

For my simple spinach omlet I used:
2 handfuls of spinach
3 eggs (or equal part egg whites or egg replacers)
Freshly cracked pepper
